Internationally recognized chef and author, Cory Schreiber, joins The International Culinary School at The Art Institute of Portland as Culinary Artist-in-Residence. Winner of the James Beard award and long-time devotee of local and sustainable food, Schreiber is most recently known for his work with the Oregon Department of Agriculture's Farm-to-School program--a program that connects Oregon's K-12 schools and local farms, with the goal of serving healthy meals in school cafeterias. "Chef Schreiber brings an incredible wealth of knowledge and experience to bear as he takes on his new role as an educator at the International Culinary School at The Art Institute of Portland. Over the last 30 years, he has made a mark as a visionary in the culinary arts. His thoughtful approach to education supports our overall mission to prepare our students to be future leaders in the field," said Chef Ken Rubin, Culinary Department Director at The Art Institute of Portland.

I've been feeling lately that my food hasn't been leaving a big enough carbon footprint lately. That's why last night, rather than trying to convince myself that those pencil thin stalks of asparagus at QFC were from some local greenhouse (local...at $1.99/#...sure), I just grabbed what I needed without thinking about jet fuel, ozone depletion, and the fact that there was a good chance some 6-year old picker was shuffling sadly through the fields from whence this came (I mean who's hands are better suited to deftly plucking these slender stalks than a 6-year old, right?). I went home and with, okay, maybe a tinge of guilt, and set about chopping and combining with some smoked salmon (excellent smoked coho from Trader Joe's) and some fresh tagliatelle from Pastaworks...[ July 4, 2009; 11:00 am to 4:30 pm. July 21, 2009; 5:30 pm to 7:00 pm. July 25, 2009; 1:00 pm to 3:00 pm. ]
